Frozen CranRaspberry Delight

I’m super excited cause my other favorite berry, the red raspberry, is in it’s prime right now. We’ve got loads sitting in our fridge and I’ve been munching on them nonstop for the last couple of days. There’s nothing like fresh fruit.

Raspberries are most famous for containing ellagic acid, a natural phytonutrient belonging to the family of tannins. Ellagic acid prevents the action of free radicals by quenching their oxidant potential, and so are beneficial in preventing damage to cell membranes and DNA. They are also excellent source of vitamin C, manganese, folate, riboflavin, magnesium, niacin, potassium and copper. This qualifies them as a very good source vitamin B, as well as soluble dietary fiber.

With all this in mind, a fridge stocked with raspberries and of course cranberry juice, here’s a simple recipe I’ve thrown together.

Frozen CranRaspberry Delight

  • 1 Banana
  • 1 can of full-fat coconut milk
  • 2/3 cup of unsweentened cranberry juice
  • 1/2 cup of raspberries
  • Combine all of the ingredients into a blender and mix until smooth. Poor mixture into freezer safe container and keep in the freezer until the mixture is slightly frozen (about 2 hours). Serve by itself, with granola, or melted dark chocolate.

    Tips:

    I used coconut milk but yogurt or milk should work just fine. If you’re like me, you might forget to take it out of the freezer and be left with a frozen solid delight. No worries. Simply put it in the fridge (or out on the counter) until it softens to your satisfaction. You can also mix ice cubes into the blender for a smoothie. Explore your options and let me know what you’ve come up with!

  1. This recipe sounds wonderful! And that photo of the raspberries is gorgeous. I think red raspberries are my favorite food in the whole world. I have been making raspberry coconut milk smoothies lately but I like your combo too. Thanks for sharing your recipe. I love cranberries too and just recently found your blog. I know I will be back often.
